Ingredients

  • 1 cup butter, softened

  • 2 cups sugar

  • 4 large eggs

  • 2 cups mashed cooked sweet potatoes

  • 2 teaspoons vanilla extract

  • 2 ½ cups all-purpose flour

  • 2 teaspoons baking powder

  • ½ teaspoon baking soda

  • 1 teaspoon cinnamon

  • ½ teaspoon nutmeg

  • ½ teaspoon salt

  • 1 cup buttermilk

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.

  • In a large bowl, cream butter and sugar until light and fluffy.

  • Add eggs one at a time, beating well after each addition.

  • Stir in mashed sweet potatoes and vanilla extract.

  • In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

  • Alternate adding dry mixture and buttermilk to the wet mixture, starting and ending with the dry mix. Mix gently until just combined.

  • Pour the batter into the prepared pan and smooth the top.

  • Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.

  • Let the cake cool slightly before slicing and serving.
