Description

These easy Egg Muffins are fluffy, savory, and packed with eggs, cheddar cheese, bell peppers, spinach, onion, and crispy bacon. They’re perfect for breakfast meal prep and can be customized with your favorite vegetables, cheese, or breakfast meat.


Ingredients

  • 10 large eggs
  • ¼ cup milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ cup shredded cheddar cheese
  • ½ cup diced bell pepper
  • ½ cup chopped fresh spinach
  • ¼ cup diced onion
  • ½ cup cooked bacon, chopped
  • 2 tablespoons fresh parsley, chopped

Instructions

  • Preheat the oven to 375°F (190°C).
  • Grease a 12-cup muffin pan.
  • Dice the bell pepper and onion and chop the spinach.
  • Whisk eggs, milk, salt, black pepper, and garlic powder in a large bowl.
  • Stir in cheddar cheese, vegetables, bacon, and parsley.
  • Divide the mixture evenly between the muffin cups, filling each about ¾ full.
  • Bake for 18–22 minutes, until puffed and the centers are set.
  • Cool in the pan for about 5 minutes.
  • Carefully remove and serve warm.
