- 5 ounces soft goat cheese
- 2 tablespoons unsalted butter
- 3 garlic cloves, minced
- ¾ cup heavy cream
- ½ cup freshly grated Parmesan cheese
- ½ cup reserved pasta water
- 1 tablespoon fresh lemon juice
- ½ teaspoon Italian seasoning
- ¼ teaspoon black pepper
- Salt, to taste
- Fresh parsley or basil
- Extra Parmesan
- Lemon zest
- Red pepper flakes, optional
Instructions
- Cook pasta in salted water until al dente.
- Reserve ½ cup pasta water and drain.
- Melt butter in a large skillet over medium-low heat.
- Add garlic and cook for 30–60 seconds.
- Pour in heavy cream, Italian seasoning, and black pepper.
- Gently simmer for about 2 minutes.
- Reduce heat and crumble goat cheese into the skillet.
- Stir until the goat cheese melts into a smooth sauce.
- Gradually add Parmesan and stir until melted.
- Add reserved pasta water as needed.
- Add cooked pasta and toss until completely coated.
- Stir in fresh lemon juice.
- Garnish with parsley, Parmesan, lemon zest, and red pepper flakes.
- Serve immediately.

- Use soft goat cheese for the smoothest sauce.
- Keep the heat low when adding the cheeses.
- Don’t boil the cream sauce.
- Reserve pasta water before draining.
