Salad
- 12 oz high-protein pasta
- 1½ lbs sirloin steak
- 1 tbsp olive oil
- 1 tsp kosher salt
- ½ tsp black pepper
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp onion powder
- 1 cup cherry tomatoes
- 1 cucumber, diced
- 1 red bell pepper
- ½ red onion
- 2 cups baby spinach
- ½ cup grated Parmesan
- 2 tbsp fresh parsley
Dressing
- ¾ cup plain Greek yogurt
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp Dijon mustard
- 1 tsp honey
- 2 garlic cloves, minced
- ½ tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Cook the pasta until al dente and let it cool.
- Season the steak and cook until your preferred doneness.
- Rest the steak for 10 minutes before slicing.
- Whisk together the dressing ingredients.
- Combine the pasta and vegetables.
- Toss with the dressing.
- Add the sliced steak.
- Garnish with Parmesan and parsley.
- Serve immediately or chill before serving.
Notes
- Slice the steak against the grain.
- Cook pasta just until al dente.
- Add dressing gradually.
- Chill for 20–30 minutes before serving for even better flavor.
