  • lbs sirloin steak

  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 cup cherry tomatoes
  • 1 cucumber, diced
  • 1 red bell pepper
  • ½ red onion
  • 2 cups baby spinach
  • ½ cup grated Parmesan
  • 2 tbsp fresh parsley

Dressing

 

  • ¾ cup plain Greek yogurt
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • 1 tsp honey
  • 2 garlic cloves, minced
  • ½ tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  • Cook the pasta until al dente and let it cool.
  • Season the steak and cook until your preferred doneness.
  • Rest the steak for 10 minutes before slicing.
  • Whisk together the dressing ingredients.
  • Combine the pasta and vegetables.
  • Toss with the dressing.
