- 12 ounces pasta
- 1½ pounds boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- ¼ teaspoon black pepper
- ½ teaspoon salt
- 2 tablespoons butter
- 3 garlic cloves, minced
- ¾ cup chopped sun-dried tomatoes
- 1 cup heavy cream
- ¾ cup chicken broth
- ¾ cup freshly grated Parmesan
- 2 cups baby spinach
- ½ teaspoon Italian seasoning
- ¼ teaspoon red pepper flakes, optional
- ½ cup reserved pasta water
Instructions
- Cook pasta in salted water until al dente. Reserve ½ cup pasta water and drain.
- Season chicken with Italian seasoning, garlic powder, paprika, salt, and pepper.
- Heat olive oil in a large skillet and cook chicken until golden and reaches 165°F.
- Remove chicken and let it rest.
- Melt butter in the skillet.
- Add garlic and sun-dried tomatoes and cook for 1–2 minutes.
- Add chicken broth and heavy cream.
- Simmer gently for 3–4 minutes.
- Reduce heat and stir in Parmesan.
- Add spinach and cook until wilted.
- Slice the chicken.
- Add pasta and chicken to the sauce and toss.
- Adjust with reserved pasta water.
- Garnish with Parmesan, parsley, or basil and serve.
Notes
Use freshly grated Parmesan for the smoothest sauce. Keep the sauce at a gentle simmer and add pasta water as needed to achieve a silky consistency.
